Thanksgiving Dinner Timeline, Day by Day

Thanksgiving dinner is rarely hard because of any one dish. It is hard because everything lands on Thursday morning. Spread the same work over two weeks and Thursday becomes the easy day. Thanksgiving 2026 is Thursday 26 November; here is the plan, counted back from it.

Two weeks out (around Thursday 12 November)

  • Guests and dietary needs. Who is coming, and what anyone cannot eat. This decides the menu, so it comes first.
  • The menu. Write it down, then mark each dish: make ahead, make Wednesday, or make Thursday.
  • Who brings what. Ask early and be specific: "a green salad for ten" rather than "a side".
  • Order the turkey if you are buying fresh or from a butcher.

The weekend before (21–22 November)

  • Move a frozen turkey to the fridge. Allow about 24 hours for every 4 to 5 pounds (the USDA guideline). A 16-pound bird needs about four days, so Sunday at the latest.
  • Shop for everything that keeps: flour, butter, stock, canned goods, drinks.
  • Make what freezes or keeps: cranberry sauce, pie dough, stock.
  • Check the kit: roasting pan, food thermometer, serving dishes, chairs. Borrow what is missing now, not Thursday.

Tuesday

  • Fresh shopping from a list grouped the way the store is laid out: produce, dairy, meat, bakery, pantry, drinks.
  • Write the oven schedule. Start from the time you want to eat and work backwards: turkey out to rest, then each side into the oven in turn. One oven is the real limit on most menus.

Wednesday

  • Bake the pies.
  • Prep vegetables and assemble any casseroles to bake tomorrow.
  • Set the table and put out serving dishes with a note on each saying what goes in it.

Thursday morning

  • Turkey in the oven at the time your schedule says, based on its weight.
  • Use a thermometer, not the clock. The USDA safe minimum is 165°F in the thickest part of the thigh, the wing and the thickest part of the breast.
  • Let it rest before carving; the oven is then free for the sides.

One hour before guests arrive

Keep this list short and written down, so you are not deciding anything with guests at the door: drinks out, sides into the oven in their order, gravy started, candles lit, one clear counter for the dishes people bring.

After dinner

Refrigerate leftovers within two hours of cooking. Then, while it is fresh, write three lines for next year: what worked, what to skip, and what to start earlier. Next November those three lines are the most useful thing in your plan.

The planner behind this timeline

The SagaLeaf Holiday Planner has two menus and two hosting plans, each laid out as guests and dietary needs, the day before, the morning and one hour before, plus a shopping list grouped by aisle and a baking page. It is undated, so the same file plans Thanksgiving and Christmas this year and both again next year.

Questions people ask

Thursday 26 November 2026, the fourth Thursday of November.
When should I move a frozen turkey to the fridge?
The USDA guideline is about 24 hours of fridge time for every 4 to 5 pounds. A 16-pound turkey needs about four days, so for Thursday it goes in the fridge by Sunday.
